First off, this recipe is absolutely delicious! It’s a rather unlikely combination in a way, as drinks using honey are somewhat unusual. One that comes to mind is mead, a very ancient drink made from honey, spices and water, among other ingredients, then fermented.
Mead is fairly difficult to come by for the most part, although it may be more popular in England. This cocktail from our sister site Mother Earth News makes use of honey simple syrup, and simple to makeit is!

Look around, not so difficult at all.
Perhaps consider writing a few articles focusing on people who win awards every year at the world’s largest international mead making competition in Denver, CO.

Many state fairs will also have mead judging. I know here in NC they do. I am quite sure some of these contenders can be found in their local farmers markets or first friday outs.

in making this recipe, particular the honey syrup, if you boil the honey you are removing all of the benifits which is what you are using the honey in the first place. Water no greater than 120 degrees should be enough to blend with the honey.
We have 3 meaderies within about an hour of us here in Alberta, so I would have to agree with John Way, it is not hard to come by!
